We've divided our menu into Ignite, Smoke, Flame, and Embers—each section exploring how fire transforms ingredients differently. Our 14-day aged Ike-Jime Hampshire trout arrives with aged caviar, while hand-dived Orkney scallops take on the subtle notes of whisky barrel smoke. For private celebrations and gatherings, we offer Abajo, our intimate 10-seat chef's table downstairs. Here, your party experiences a multi-chapter menu that draws from Colombian culinary traditions while maintaining our fire-focused approach. The experience begins at 7pm, with our chefs guiding your group through multiple courses. We've created three drink pairings that complement the journey, available when you book. Our wine selection comes from small artisan growers and traditional producers we've personally chosen to match our cooking style.
