Our horseshoe-shaped counter wraps around the open kitchen, creating 19 intimate seats that put every guest at eye level with Chef James Knappett and the team as they craft each course right before your eyes. The space combines warmth with precision, caramel leather chairs contrasting against the gleaming stainless-steel counter where your plates will be assembled. Above, exposed ductwork and polished tile backdrops frame the kitchen workspace, while soft ambient lighting keeps the focus on what matters: the food, the craft, and your companions gathered around this unique table. We've designed this experience for groups who want something beyond traditional dining. Corporate teams find the format breaks down barriers as colleagues share discoveries together, watching wild mushrooms transform into delicate broths or hand-dived scallops meet their perfect garnish. Birthday celebrations become more meaningful when the chef explains why today's venison came from this particular Scottish estate, or how yesterday's foraged herbs shaped tonight's menu. Your evening begins in our lounge with cocktails made from spirits we distill ourselves, before moving to the counter for the main experience. Our sommelier draws from a collection that includes rare Grower Champagnes we've been gathering for years, matching each pour to that day's menu. The entire journey takes about three hours, with the kitchen's rhythm setting a natural pace for conversation and discovery.
